Original recipe found here and modified to make gluten-free and sugar free.
Shopping List:
3 cups gluten-free oats (Bob's Red Mill is my fave)
1/4 cup olive oil
1/4 cup butter, melted
1/4 cup raw honey
1 cup unsweetened flaked coconut
1/3 cup whole almonds
1/2 cup chopped sunflower seeds
1/3 cup raw pumpkin seeds
1 teaspoon (or more) cinnamon
Salt to taste
Dried fruit options: bananas, strawberries, cranberries, dates, raisins
Directions:
Preheat oven to 375°F. Stir together all ingredients except the fruit in a large bowl until combined. Line a baking sheet with parchment paper and spread mixture evenly on the pan. Bake until golden brown, about 20-35 minutes, stirring every 10 minutes or so. This will burn easily, so it's best to check it every 10 minutes.
After cooled, stir in dried fruit. To keep fresh refrigerate or freeze.
Enjoy as a healthy snack on top of yogurt or fresh fruit.
{PS} You could omit the honey and fruit if you are on a sugar-free diet and add more nuts like pecans and walnuts.
